Chai Spice Baking Blend

As part of my current obsession with chai, I have been refining my chai spice baking mix for seasonal baking treats. I'll be posting my pumpkin chai snickerdoodle cookie recipe later this week, using this blend, but it can easily be used in muffins, cakes, or any other recipe that would do well with a warm, autumnal flavor.

Chai Spice Baking Blend

Course: Ingredients

Prep Time: 10 minutes

Cook Time: None

Total Time: 10 minutes

Yield: 8.25 Tbsp


  • 3 Tbsp ground cinnamon

  • 2 Tbsp ground ginger

  • 1 Tbsp ground cardamom

  • 1/2 tsp. ground allspice

  • 1/2 tsp. ground cloves

  • 1/2 tsp. ground black pepper

  • 1/2 tsp. ground star anise (optional)

  • 1/4 tsp. ground fennel (optional)


Combine all of the spices into one container and shake to blend. If you cannot find star anise or fennel already ground, you may grind them yourself with a mortar + pestle or a spice grinder. You may also leave them out of the recipe.
